This food truck in Kapa'a has been serving musubi since 2020, and locals line up regularly. What started as one truck (named "Barbara" after a local musubi pioneer) has expanded to three locations across the island.
The menu extends beyond standard Spam musubi, though theirs is solid. The standout is the Ahikatsu musubi – fresh ahi from local fishermen, panko-crusted and fried, then wrapped in rice and nori with katsu sauce and furikake. If you prefer something lighter, the ahi poke bowl delivers cold, perfectly marinated raw ahi (order the hapa bowl for half traditional, half spicy) over warm seasoned rice. The Kalua pork and Korean fried chicken plates round out the offerings.
At the original Kukui Street location, you'll pull up to the window, order, and eat your way through island comfort food. You'll find a casual atmosphere that works well for beach-goers grabbing lunch, anyone craving local flavors, or visitors exploring Hawaii's musubi culture.
